Classic Shrimp Scampi
Tiny bursts of lemon oil infuse a rich garlic butter, complete with fresh Italian parsley... Shrimp scampi sends me to a happy place. I find that a side garnish of fresh arugula is the perfect peppery-bitter compliment.
For a flavor boost, I like to marinate the shrimp for about 20 min. in a marinade of EVOO, fresh Italian flat leaf parsley, fresh garlic, crushed red pepper, salt, and the same choice of dry white wine used in the sauce. See directions below.
For a heart-healthier version, replace the butter with olive oil and the pasta with zoodles!
