DIRECTIONS
Step 1
Lightly toast bread then rub toast lightly with a fresh garlic clove. Mash avocado in a small bowl with lemon juice, parmesan, minces garlic, a pinch of fresh parsley, and a few pinches of salt & pepper. Smear avocado mix generously on toast.
Step 2
Toast almonds or pistachios over medium heat. Toss regularly. Add salt and crushed pepper. Remove from heat then add oil, parsley and scallions. Set aside.
Step 3
Over medium high heat, pour balsamic vinegar into a shallow sauce pan. Let cook for 3-5 minutes then add brown sugar, oil or butter, and salt & pepper.
Step 4
Finely chop a dried date. Sprinkle toasted nut mix and dates on top of the avocado toast. Place smoked salmon on top, and lastly, finish with a drizzle of balsamic reduction sauce.
